    guanciale espuma, preserved raspberry pepper gelee

  • parsnip custard

    golden trout roe, thyme, whipped bacon creme fraiche, Noble maple-sherry vinegar

  • smoked salmon

    crispy skin, creme fraiche, fresh grated wasabi rhizome, chives

First course - choose up to two

  • spring beets

    butter lettuce, strawberries, Midnight Moon goat gouda, marcona almonds, citrus vinaigrette

  • chopped salad

    romaine lettuce, nappa cabbage, rainbow carrots, snap peas, black sesame, fresh ginger, toasted almonds, blood orange-miso vinaigrette

Main course - choose up to two

  • Waygu beef nama

    ichimi togarashi potato crisp, pickled shallots, young turnip & greens, matsutake shoyu “bordelaise” sauce

  • Liberty Farms duck breast

    yukon gold potato confit, pine nut romesco, mustard seed "caviar", natural jus

  • pink peppercorn rack or lamb (+15 per-person)

    celery root purée, fava beans, rainbow chard, mint-tomato jam, calamansi infused jus

  • Mt.Lassen trout

    charred shallots, roasted fioretto, spring peas, confit fennel, spruce tips, meyer lemon sabayon

  • morel mushroom & asparagus tart

    slow cooked leeks, charred leek ash, beurre monte

  • braised young turnip & greens

    buckwheat soba noodles, cured egg-yolk, yuzu furikake, cucumber, smoked-butter dashi

Dessert - choose one

  • cheesecake tartlet

    hazelnut & dark chocolate ganache, wafers, strawberries

  • cannoli

    whipped ricotta, crumbled pistachio, TCHO dark chocolate
